The cafe spends months of every year with coffee growers in East Africa, coffee millers in Latin America, and coffee drinkers in California to find beautiful coffees, which are then hand-roasted in a vintage steel roaster.
The cafe started in an apartment in the summer of 2010, but has since grown to become a team of 16 people, baking over 450 loaves of bread per day and teaching classes on how to bake bread and pizza at home.
The cafe uses a mill to grind all of its whole grain flour every day, and uses the same sourdough starter that was originally obtained from a friend's grandmother.
