The restaurant specializes in pork-based, tonkotsu ramen, reflecting its place of origin, Kurume City in Fukuoka, the birthplace of tonkotsu ramen.
The secret of the rich, yet light tonkotsu broth is in the ingredients, which include only pork skull bone and water, simmered for over 15 hours at a high temperature to achieve the maximum umami.
The noodles are made exclusively by a local artisanal noodle company using an original recipe, which had never left the factory in Japan before being used at the Pasadena location.
There are three signature ramen options: the rich broth topped with a house-blended umami paste, onion and garlic infused oil, and pork back fat; the mild tonkotsu broth; and the miso ramen with red, white, and barley miso blended with tonkotsu broth and topped with spicy oil.
The goal is to not only serve the best bowl of ramen possible but also to give customers a sense of kando, an awe-inspiring feeling, through the food, service, and overall dining experience, with the aim of making everyone, from customers to employees, happy.
